Cut the oranges in half and scoop out the flesh to create sweet little bowls for the following recipes.

Mango Orange Salsa
This looks beautiful on a Mexican food buffet or on the dinner table the next time you serve grilled fish tacos.

 This recipe makes about 2 cups.  

1 cup diced mango,
1/2 cup diced red onion,
3 tablespoons chopped cilantro,
1/4 cup minced red bell pepper,
1/2 cup orange segments,
2 tablespoons lime juice
1 tablespoon minced jalapeno chile.
Salt and pepper to taste.

Combine all the ingredients.
Chill at least 2 hours before serving in orange bowls.

 

Fruit Salad

This recipe makes 3-1/2 cups.

1/2 cup chopped banana,
1/2 cup raspberries,
1 cup strawberry chunks,
1/2 cup grapes
3/4 cup orange segments.

Combine all the ingredients.  
Drizzle with 2-3 tablespoons of honey.

Dust lightly with ground ginger and toss to mix.

Spoon into orange halves and serve.
